From premium vineyards in the Adelaide Hills, grapes were hand picked then fermented with a small portion of whole bunch (about 5%) for complexity. The wine was then added to 600 ltr barrels for maturation, a portion of which had seen 30% new oak the rest was consigned to old oak for subtle oak integration.
